Spanish Tapas

We’re in Spain for a few days visiting friends, and while spending a day in Malaga, I had the most amazing tapas ever. And what was even more amazing is that it was basically a plate full of aubergine!

Called Berenjenas con Miel, the aubergine is cut into very thin slices, floured, fried till golden, then drizzled with honey. I haven’t had time to try making this myself yet, but I found a recipe here that I’m going to try out when I get home!

I still can’t believe I ordered, and ate, aubergine. I mean, just aubergine. Normally I go straight for the meat or potato tapas dishes, but aubergine is such a ‘meaty’ vegetable. It was lush!

Now, before you point out that this recipe isn’t 100% Nutritionally Responsible, it’s pretty darn close! And the sweet fix you’ll get from this dish is still better for you than a whopping piece of cake :)

It’s all about choices, remember!

PS If you don’t have one, grab something like the OXO Good Grips Hand Held Mandoline Slicer from Amazon. Makes fine slicing of things like aubergine, corgette and potato a doddle!
