We’re in Spain for a few days visiting friends, and while spending a day in Malaga, I had the most amazing tapas ever. And what was even more amazing is that it was basically a plate full of aubergine!
Called Berenjenas con Miel, the aubergine is cut into very thin slices, floured, fried till golden, then drizzled with honey. I haven’t had time to try making this myself yet, but I found a recipe here that I’m going to try out when I get home!
I still can’t believe I ordered, and ate, aubergine. I mean, just aubergine. Normally I go straight for the meat or potato tapas dishes, but aubergine is such a ‘meaty’ vegetable. It was lush!
Now, before you point out that this recipe isn’t 100% Nutritionally Responsible, it’s pretty darn close! And the sweet fix you’ll get from this dish is still better for you than a whopping piece of cake
